So you rinse it, seal it in a bag with barely damp sphagnum, and set it at the back of the refrigerator for ninety to a hundred and twenty days. In spring you plant it an inch down in a deep pot. Five to seven years later, fruit no corporation ever priced.
Bi socair — be still.
What are you growing that won't pay off for years?

Sausage gravy → Brown 1lb of breakfast sausage in a wide skillet about 5 minutes; sprinkle 3 tablespoons of flour over the fat and stir one minute; pour in 2.5 cups of milk, stirring until it thickens and bubbles, about 3 minutes. #Recipe #Cooking #CheapEats #FoodAsMedicine #BudgetCooking #Food #Photography #QueerJoy #MutualAid https://thistleandmoss.com/p/carry-your-own-goddamn-garbage-the-press-padlocked-out-lesbian-loaded-like-a-slur-and-kindness-haule#the-nurturing-food-as-medicine?utm_source=mastodon&utm_medium=social&utm_campaign=fedica
Two handfuls of lemon balm, bruised between your palms until the room smells like lemon and cut grass.
Just-off-boil water, ten minutes, lid on. The lid is not a suggestion — the whole medicine is volatile and it will walk out through an open cup while you check your phone. In Gaelic the melissas fall under lus an eòin in some regions, though the naming wanders by glen.
Drink it warm in the late afternoon, when the day's adrenaline starts eating its own tail.
This is the plant for the nerve that keeps firing after the danger has passed — the one that has you rehearsing an argument at four in the morning with somebody who is asleep and doesn't know you're fighting.

Forty percent protein by dry weight. That's among the highest of any plant food there is, and it costs less than a cup of coffee.
Lupini fed Mediterranean and Andean households for thousands of years before an American grocery store decided they were a novelty in a jar by the olives.

Roughly 40% protein by dry weight. Among the highest of any plant food on earth, and almost nobody in an American grocery store knows it's there.
Lupini have fed Mediterranean and Andean households for thousands of years. Raw, they're genuinely bitter — quinolizidine alkaloids, days of soaking and rinsing to debitter — which is why most of us should buy them already brined in a jar. Rinse, pop them out of their skins, olive oil, lemon, a great deal of black pepper. A bowl of protein for less than a coffee.
Two hard cautions, and I'd rather say them twice than not enough: lupin is a recognized allergen with real cross-reactivity to peanut, so if peanuts are a problem in your house then lupin is a problem in your house. And the ornamental lupines in the garden are a different species and genuinely toxic. Admire those and walk on.

Pantry meal: skillet squash-and-lemon pasta — feeds 3, under $10, ten minutes → Seven things: 12 oz short pasta, two medium summer squash, four cloves garlic, olive oil, one lemon, half a cup breadcrumbs, grated parmesan. Boil the pasta. Toast the crumbs in oil with one minced clove until sandy-gold; set aside. Grate the squash coarse, hit the hot pan with it and the rest of the garlic for three minutes — it collapses fast — then add drained pasta, a splash of its water, lemon zest and juice, the cheese. Toss hard. Crumbs on top.
Late July is when squash gets cheap enough to be insulting, and the grater turns a vegetable nobody's excited about into something that behaves like a sauce. #Recipe #Cooking #CheapEats #FoodAsMedicine #BudgetCooking #Food #Photography #QueerJoy #MutualAid #Solidarity #pride

Saxifrage. The little rock-breaker — lus nan cluas in some of the old tongues, its name straight from the Latin for stone-breaker, because it roots in the cracks of granite and holds.
Tear the young leaves small into a bowl of warm broth. No boiling — that cooks the life right out of it. Cool water, torn leaves, a few minutes in the warm bowl. That bright green astringency is medicine for a throat the smoke and the crying roughed up.
Something that lives in stone, teaching the throat to hold. That's the season on the plate.
What do you reach for when your throat's had a week?

The parts you throw out are the parts with the most fiber. Carrot tops carry more vitamin C than the root.
Broccoli stems: peel the woody outside with a vegetable peeler, shave the pale core into ribbons. Carrot tops: treat like parsley, they're related and behave the same. Chard ribs: slice thin, five minutes ahead of the leaves.
Cost, zero. You already paid for them. Twice, if you count the hauling.
There is a particular light in a kitchen at seven in the evening when someone stands at the counter shaving a broccoli stem instead of dropping it in the bin. It has nothing to do with thrift. It's the decision that nothing in this house is beneath notice.
What do you save that people tell you to throw out?

Broccoli stems. Chard ribs. Carrot tops. The fennel fronds you paid for and binned.
Peel the woody outside off a broccoli stem and the inside is sweeter than the crown — slice it into coins. Chard ribs cook like celery, three minutes ahead of the leaves. Carrot tops are an herb. Chop them like parsley and stop apologizing.
Roughly a third of what most kitchens buy in produce goes in the bin, and almost none of it is spoiled. It's the part somebody in an advertisement decided wasn't the food.
"The most common way people give up their power is by thinking they don't have any." — Alice Walker

The heart-notch clover at the wood's edge tastes like rain made edible.
Wood sorrel — seamsag in the old tongue. Real vitamin C, a clean sour snap. Scatter it raw over a salad, float it on cold soup. Keep it a bright accent, never a whole bowl — it's sharp with oxalic acid.

No one at your table goes hungry because the week was hard. That, too, is resistance.
Soften onion and garlic in oil. Add crushed tomatoes, a drained can of chickpeas, cumin, smoked paprika, salt. Simmer ten minutes. Make four wells, crack an egg into each, cover till the whites just set. Warm bread to swipe the pan.
Seven dollars. Feeds four.
Who taught you that feeding people was a kind of love?

Cold sesame-cabbage crunch (8 things, feeds 4, under 10 min, no beans) → shred half a green cabbage and two carrots; whisk tahini, soy, a squeeze of lime, a little honey, some cold soaked noodles even and hot water to loosen; toss, top with whatever nuts or seeds are in the drawer. It costs pocket change and asks nothing of the oven. No one at your table goes hungry because the week tried to break you.
