Here are few other pictures from the garden. we tried different species of eggplants this year and this is first year for sugersnap peas. chillies are not really hot which is just as well because with age our tolerence for super hot has gone down fair bit. 2/2 #vegetables #vegetablegardening

Vegetable garden has done well this year. but we are seriously running out of space. our lot just isn't big enough to do justice to both flowers and vegetables. But eating food that grew literally few feet from kitchen is much better than buying days old produce from big commercial farms. 1/2 #vegetables #vegetablegardening

The parts you throw out are the parts with the most fiber. Carrot tops carry more vitamin C than the root. Broccoli stems: peel the woody outside with a vegetable peeler, shave the pale core into ribbons. Carrot tops: treat like parsley, they're related and behave the same. Chard ribs: slice thin, five minutes ahead of the leaves. Cost, zero. You already paid for them. Twice, if you count the hauling. There is a particular light in a kitchen at seven in the evening when someone stands at the counter shaving a broccoli stem instead of dropping it in the bin. It has nothing to do with thrift. It's the decision that nothing in this house is beneath notice. In Mexico, serranos are a preferred pepper for fresh eating, and I give most of mine away to friends from Mexico. I’ll dry some to make crushed red pepper. The cucumbers are actually a weird form of melon that functions as a cucumber. I first tried these in Spain. They are a typical veggie in SE Spain, known as “alficoz” (or “alpicoz”).

Today, a "tap tap tap" at our backdoor for several minutes. Suffering from a severe sinus infection, house is a mess, hair in a bun, a sick pup, there was zero chance I was going to open the door. In the mountains, we don't have random people that stop by or people trying to sell you religion or products. So, someone on a Sunday tapping at my back door is not normal. About 30 minutes later, I take the #Yorkies out before the big rain and found this box of #vegetables at the back gate. No note. I started to tear up at the kind gesture because this is who #Appalachians are. And not feeling well enough to cook, someone thought of me enough to supply food on what was a really mean week. #Appalachia is full of #kindness. I'm excited about my potato harvest upcoming. #gardening #vegetables #homegrown I was removing upright stakes I'd put in place to keep them standing a little longer, and checked the soil at the base.... giant honking red potato looking at me. YES!!!!!!!@@ THE GIANT GROW BAG HAS WORKED

  1. Healthy #strawberry #seedlings taking root and beginning to mature.

  2. #Haskap #berries are more abundant and riper after I pruned the bush at the end of winter.

  3. Pre-made, pre-portioned frozen beans, rice and seasoning staples are awesome for a healthy brunch when I want something to go with fresh cut or frozen #vegetables, topped with salsa, curry or soup.
