The parts you throw out are the parts with the most fiber. Carrot tops carry more vitamin C than the root. Broccoli stems: peel the woody outside with a vegetable peeler, shave the pale core into ribbons. Carrot tops: treat like parsley, they're related and behave the same. Chard ribs: slice thin, five minutes ahead of the leaves. Cost, zero. You already paid for them. Twice, if you count the hauling. There is a particular light in a kitchen at seven in the evening when someone stands at the counter shaving a broccoli stem instead of dropping it in the bin. It has nothing to do with thrift. It's the decision that nothing in this house is beneath notice. Broccoli stems. Chard ribs. Carrot tops. The fennel fronds you paid for and binned. Peel the woody outside off a broccoli stem and the inside is sweeter than the crown — slice it into coins. Chard ribs cook like celery, three minutes ahead of the leaves. Carrot tops are an herb. Chop them like parsley and stop apologizing. Don't throw the wilted greens or the herb stems or the carrot tops. Revive them. Limp spinach, sad parsley, the leafy crown off a beet — plunge it into a bowl of ice water for ten, fifteen minutes, and watch it stand back up, cells drinking, turgor returning. Then blitz the stems and tops with a clove of garlic, oil, any nut, into a rough peppery pesto. Near-zero cost. Near-zero waste. Results of that food rescue route I mentioned! A lot of produce. Neighbors came and grabbed a lot of the veggies when it came in. I put the rest into the fridge for others to grab later.
