Don't throw out the heels and the hardened ends. Grate or tear them, toss with olive oil, salt, a smashed garlic clove, toast in a dry skillet until they're gold and loud. Pangrattato — the poor cook's parmesan. Keeps a week in a jar. Turns any bare bowl of pasta into something with crunch and dignity. A loaf costs what it costs. In deep summer the green spikes give up a golden pollen you can shake straight into a bag — bright, protein-rich flour. Comb the ripe spike over a bowl, fold that gold half-and-half with regular flour, and you've got pancakes the color of the sun.
