1- it’s avocado season! 2- I made guacamole for Thai friends that had never eaten guacamole, they were blown away by the taste and devoured the bowl!! 3- used Thai chilies from the third harvest of my chili bush Recipe: thinly mince half a white onion, press or mash 7-10 garlic buttons, mince 4-10 chilies, juice 1-2 limes, mix these together and let them get saucy together. Add 4 soft avocados and mash together. Salt and pepper to taste. Put avocado seeds in the bottom of the bowl (they will keep the avocado from oxidizing brown) add the guac to the bowl, chill and serve with tortilla chips. #ThreeGoodThings #3goodthings #food #recipe

Irish Potato Bread My one of my all time favourite breakfast companion foods. This time, making it myself and tasting way better than the store bought ones. 1/ After boiling potatoes, mash with butter, add salt, pepper and Rosemary seasoning (this part is very important or else, no flavour). Mix, add flour and mix again then knead. 2/ Roll and flatten dough, cut into sections, then dry fry each piece, 2 at a time in my case. 3/ Turn, fry the other side , making sure they're cooked properly then set on plate and dry fry the rest of the slices. 4/ Serve with breakfast or on it's own. Pantry meal: skillet squash-and-lemon pasta — feeds 3, under $10, ten minutes → Seven things: 12 oz short pasta, two medium summer squash, four cloves garlic, olive oil, one lemon, half a cup breadcrumbs, grated parmesan. Boil the pasta. Toast the crumbs in oil with one minced clove until sandy-gold; set aside. Grate the squash coarse, hit the hot pan with it and the rest of the garlic for three minutes — it collapses fast — then add drained pasta, a splash of its water, lemon zest and juice, the cheese. Toss hard. Crumbs on top. A Story in a Few Lines Today, I look around me and see nothing but helplessness. I cannot afford my personal expenses. I cannot complete my medical treatment. I cannot even repay a debt that weighs heavily on my heart before it weighs on my shoulders. Then my memories carry me back to years filled with hope, determination, and dreams. I was not yet seventeen when I got married. Despite that, I completed both high school and university while being a wife and a mother. Every semester, I earned honors and maintained an outstanding academic record. I was raised in a financially comfortable family, and so was my children’s father’s family. Yet I never wanted my success to come from privilege. I wanted it to be the result of my own hard work. I studied until dawn, then started each new day fulfilling my responsibilities as a mother with all the strength I had. I will never forget the day I gave birth to my twins. It was a cesarean section, and my condition was critical. Yet only five days later, I sat for one of my university exams. Every movement was painful, and every minute in that classroom felt unbearable, but I was determined not to lose my place at the top of my class. I believed that education is a mission, and that a person’s true worth lies in what they contribute to society, not in the wealth they inherit. My hard work led me to become a university lecturer for two years before joining one of the country’s most important government ministries. Step by step, I built my life. I raised my children, built my home, and created my future with my own hands. Even then, I returned to university once again to specialize in programming alongside Information Technology and Design, because I have always believed that learning never ends. Then the war came. And within moments, everything I had built was taken away. I lost my home, my car, my savings, my job, and everything I had spent years working to achieve. Even then, I refused to give up. I successfully applied to return to university teaching remotely. I believed it would be my chance to rebuild my life and stand on my feet again, no matter how difficult the road would be. But today… I am confined to a hospital room. I cannot afford my medical treatment. I cannot cover my personal expenses. I cannot even pay for the training program that I must complete before I can begin my new job. I never imagined that after all those years of perseverance, hard work, and dedication, I would reach a point where I could no longer provide even my most basic needs. What hurts me most is not only the illness, nor only the war. It is the heartbreaking reality that after spending my life building a future with dignity, I now find myself powerless, simply waiting for one chance to stand again. Today, I need your help. I have been unable to raise the funds I desperately need. Despite all my efforts, I struggle to receive donations or support, and I honestly don’t know where I’m failing.
