Chefs in Halifax are changing kitchen workspaces Chefs in Halifax kitchens are making efforts to improve workplace conditions and diversity to make the industry healthier and more appealing. Slowcooker ? So many times I have seen slowcookers being used in TV-series . ( Mainly #kdrama ) But never came close to one in real life. Nobody around us uses or used one ever. We are not new to slowcooking on gas or electric. Either classic goulash -types or curry dishes. But the thought of using one is appealing. Anybody ? #slowcooker #cooking #food #kitchen

When I don’t necessarily have much to say because the world becomes a bit much, I post anothe #TipOfDay Here is a tiny but pleasing improvement to ceramic-coated skillets that have brown stains over time. I felt like I tried “everything” over the last few years. (I really hoped the baking soda paste would work, but nope. Then I tried BKF paste but nope. But now, ta-da! THIS. 30% white vinegar boiled at a simmer 1:1 with water. 15 minutes. And yes I used a lid because, ewwww—fumes. At first I was disappointed. But literally 20 minutes later after having rinsed and dried skillets, it was better. A cleaning miracle happened on one of the skillets! I’m sold on 30% vinegar instead of typical household at 5% 3 photos #Stain #Cleaning #Kitchen #Skillet #Cooking #Vinegar

The parts you throw out are the parts with the most fiber. Carrot tops carry more vitamin C than the root. Broccoli stems: peel the woody outside with a vegetable peeler, shave the pale core into ribbons. Carrot tops: treat like parsley, they're related and behave the same. Chard ribs: slice thin, five minutes ahead of the leaves. Cost, zero. You already paid for them. Twice, if you count the hauling. There is a particular light in a kitchen at seven in the evening when someone stands at the counter shaving a broccoli stem instead of dropping it in the bin. It has nothing to do with thrift. It's the decision that nothing in this house is beneath notice. What do you save that people tell you to throw out? https://twp.ai/4hsxu3 #ZeroWaste #FoodWaste #CookingFromScratch #Frugal #RootToStem #Kitchen #FoodAsMedicine #MutualAid #EarthBased #Sustainability #HomeCooking #Vegetables #Photography #Solidarity

Induction stove, week 2

  1. Family is very happy with the switch!
  2. Air quality improvement in the house is dramatic. Especially CO2 readings.
  3. Stove is a LOT cleaner amd easier to clean. Magnitudes easier then the prior gas range.
  4. Heat shielding on oven is far, far better than the old oven. Does not heat up the house like the old oven, which was noticeably adding heat to the house when on.
  5. Manual controls with knobs on this particular model is great! No touch screen required for the cooktop.
  6. Heat level control is absolutely stellar on this model. Everyone here is very happy about that (was a concern vs. gas)

Kitchen update: I still haven’t figured out the stain color. The fridge was delivered almost a month ago. We’ve been using it mostly “naked” while I continue to figure out the stain. Spouse eventually put a makeshift panel/handle on one door, and the freezer drawer. The handle is a stair handrail lol. It’s very chunky and reminds me of The Flintstones. I swear it’s gonna look real nice when it’s done (if we don’t butcher it in some way). This makeshift panel is a pre-finished maple which is actually going on the inside of our cabinets. But the final panels will be white oak with brushed brass handles, like the rest of our cabinetry will be. #KitchenRemodel #KitchenDesign #InteriorDesign #Kitchen #DIY

Spouse pointed out that even though both the door and drawer panels were cut from the same piece, the color looks different because of the way the grain is oriented: vertical on the door, and horizontal on the drawer. It makes me wonder if that’s some of the frustrating color difference I’ve noticed in other kitchen cabinet photos of white oak. #KitchenRemodel #KitchenDesign #InteriorDesign #Kitchen #DIY

In other news, I’ve been advised to go ahead and choose the final countertop material I ultimately want, because removing a temporary counter from new cabinets could damage them. Does anyone have any experience with this? It really puts a kink in my plans (even though I’d love to have my dream countertop now) b/c we can’t afford to do the whole kitchen all at once, so trying to match stone slabs later would probably be next to impossible. #KitchenRemodel #KitchenDesign #InteriorDesign #Kitchen

It doesn't help that I keep falling in love with the most expensive stone options on the planet. #KitchenRemodel #KitchenDesign #InteriorDesign #kitchen #DIY

Half a green cabbage, shredded and sizzled hard in a big glug of oil with a whole sliced head of garlic and a heavy pinch of red pepper, until the edges char and sweeten. Toss in a pound of drained noodles, a splash of pasta water, salt, a fistful of grated cheese. Seven ingredients, ten minutes, feeds four under ten dollars. Cabbage is the cheapest honest vegetable there is, and it turns silky and sweet when you let it catch color. Nobody at this table goes hungry because the week was cruel. No one at your table goes hungry because the week was hard. That, too, is resistance. Soften onion and garlic in oil. Add crushed tomatoes, a drained can of chickpeas, cumin, smoked paprika, salt. Simmer ten minutes. Make four wells, crack an egg into each, cover till the whites just set. Warm bread to swipe the pan. Seven dollars. Feeds four. The wilted rosemary in your fridge is eight dollars of seasoning you were about to compost. Strip the woody past-their-prime herbs — rosemary, thyme, sage — and pulse them with coarse salt until green and fragrant. Spread on a plate to dry overnight. Ten minutes of work. A jar of something the co-op charges for, made from the scraps. The dignity of a kitchen where nothing is wasted. What's wilting in your fridge right now that could still become something? https://twp.ai/4hth9n #HerbSalt #Frugal #ZeroWaste #Cooking #Herbs #Kitchen #FoodAsMedicine #Sovereignty #Photography #Homestead #Nature #SlowLiving #DIY #Apothecary

Don't throw the wilted greens or the herb stems or the carrot tops. Revive them. Limp spinach, sad parsley, the leafy crown off a beet — plunge it into a bowl of ice water for ten, fifteen minutes, and watch it stand back up, cells drinking, turgor returning. Then blitz the stems and tops with a clove of garlic, oil, any nut, into a rough peppery pesto. Near-zero cost. Near-zero waste. This is the whole fight against the burning harvest, shrunk to the size of your own counter. A third of the food we grow gets thrown away — a third we could choose to eat instead. What did you save from the bin this week? It's been an up&down kind of week, but #Friday delivered #moments that helped turn it around:

  1. Woke up to a big #thunderstorm at 5am / caught up with a good #nap hearing gentle #rainfall toward evening.

  2. It's been a #creative week in the #kitchen, clearing out random freezer #leftovers to make room for fresh #garden surplus.

  3. And I spoke up about accommodations needed to better communicate with a #health provider.
