Roughly 40% protein by dry weight. Among the highest of any plant food on earth, and almost nobody in an American grocery store knows it's there. Lupini have fed Mediterranean and Andean households for thousands of years. Raw, they're genuinely bitter — quinolizidine alkaloids, days of soaking and rinsing to debitter — which is why most of us should buy them already brined in a jar. Rinse, pop them out of their skins, olive oil, lemon, a great deal of black pepper. A bowl of protein for less than a coffee. Two hard cautions, and I'd rather say them twice than not enough: lupin is a recognized allergen with real cross-reactivity to peanut, so if peanuts are a problem in your house then lupin is a problem in your house. And the ornamental lupines in the garden are a different species and genuinely toxic. Admire those and walk on.
