bread update- My baking has slowed down since I have been busy, with many breads not getting the optimum gluten network build up from me missing the prime kneading / stretching times. I am however mastering fermentation times and predicting my starter behavior. Bread 58 I split into two doughs, and after forgetting to salt the first one (Florence style) I salted the second, folded butter into it and coated the outside in wheat bran. The resulting rosemary sourdough bread came out pre buttered and SO tasty! Now I am watching videos of people making croissants and folding butter into their dough many many times. I am wondering what would happen if I actually stretched the dough when I was supposed to, and kneaded a fine layer of cold butter into the bread before it got to its super intense bread flour rise? Perhaps by bread 60 I will finally get the tight gluten networks I see the bread influencers getting. #bread #baking #nyc #breadlog #sourdough #butter #gluten #bacteria #yum

I started a sourdough recipe yesterday and set the dough up for its bulk rise, and then proceeded to forget about it. Upon waking this morning, I remembered what I had done and found it nearly overflowing its bowl in the microwave where I had left it. Seeing now if I can salvage it… #sourdough

Spring asparagus blanched in 90 seconds, shocked in ice, dressed with lemon and olive oil. Sourdough from your own flour. "Small is enough." Food is medicine and prayer. In celebration of my #sourdough starter turning 7 years old this month, here is a random post from my sourdough writing: Local Flours Sours: GroundUp Coffee Flour I was feeling adventurous when I bought a wee bag of local-ish upcycled coffee flour from a local food market.... 🔗 https://wand https://wander.8r4d.com/2022/11/local-flours-sours-groundup-coffee-flour/

My new sourdough starter finally smells solidly good (my first time), so it is time to name it. It struggled for the first week because I wasn't keeping it warm enough. Overnight we let the house cool down and I've been feeding it in the evening. Second week I switched to storing it on a folded towel on the heated floor in our primary bathroom that is now set to a fixed 24 C. Tomorrow I try my first loaf. Welcome to the world, The Yeasties Boys. (name courtesy my wife Nancy) #sourdough
