So, you need to feed a crew of 4 and you only have 10 bucks: Here you go. (feeds 4, under $10) → Thin-slice 4 potatoes & half an onion; soften them in a generous glug of oil in your biggest skillet over medium, covered, ~7 minutes till tender. Beat 6 eggs with salt & plenty of pepper, pour over, add a fistful of any cheese if you've got it. Lid on, low heat, till the top just sets. Cut in wedges. Potatoes, onion, eggs, oil, salt, pepper, cheese — seven things, ten minutes, and everybody at the table eats warm & full. Suddenly getting a whole new lease on life at close to 47 years old has been unexpected, but incredible. Between years of kidney, bladder and urethra pain, as well as many years of healing as a survivor of various things, to now being pain free for kidneys bladder and urethra, and revelling in my sexuality, my transness, and my life in general despite other disability.
