The oldest written #hummus recipe in the world is 776 years old...

It was written in Aleppo, Syria in 1250 CE by a historian named Ibn al-'Adeem. Not a chef. A historian. Who also happened to document one of the most extraordinary cookbooks of the medieval period.

The base of the recipe is identical to what you make today. Chickpeas, tahini, lemon, garlic, salt. That part has not changed in 776 years.

There's a widespread myth that medieval people used spices to cover up the taste of rotten meat.

The whole story traces back to one book. In 1939, a scientist named J.C. Drummond published The Englishman's Food and suggested that medieval recipes were so heavily spiced because the meat was frequently tainted. No evidence. Just an assumption. One sentence in one book published 85 years ago.

This week the Getty Villa Museum will begin offering a rare look at scrolls from its ancient Egyptian “Book of the Dead” collection.
The collection of 19 manuscripts written on scrolls of papyrus and linen fragments are fragile, with one of them dating back nearly 3,500 years. Because of that, the materials are not usually on display to the public and the gallery will be carefully lit, temperature and humidity-controlled.
