Straight-from-the-pot style ‘kamaage’ udon #noodles with #natto, #seaweed and #katsuobushi dip for today’s lunch. I use the natto sauce to flavour the whole thing, but substitute the mustard with wasabi, to get a bit of a yudofu vibe going. It’s cheap and easy to put together, and super healthy too! 👍 #Japan #pescatarian #HomeCooking #ビバ丼

Chilled soba #noodles with some satsuma-age fish cakes for lunch today. A good way to use up my ‘hitashimame’ marinade as a good ‘enuff soba dipping sauce! #Japan #pescatarian #HomeCooking #ビバ丼

💁🏻‍♀️ TIL:🍜👩‍🍳 A #Bangkok noodle shop called Wattana Panich has served #beef #soup from the same continuously simmered broth since 1974. The third generation owner tends the 5 ft (152 cm) pot daily, adding fresh ingredients while straining and boiling the #broth each night. The story raises an interesting question: can a #liquid remain the same #soup after 52 years of molecular turnover? 👉 https://www.openculture.com/2026/07/the-thai-beef-noodle-soup-that-has-been-continuously-simmering-for-52-years.html #thailand #noodles #stew #food #science #cooking #tradition #fermentation #history #culinary #chemistry

I finally cracked and bought some soba (buckwheat noodles). I haven't had them in a couple of decades, but hadn't bought any because they don't come in small bundles (~40g) and DW is gluten free and soba are not* GF. But bugger it, I'm a big boy, I can split a 90g bundle.

Used them in today's lunch noodle soup, very nice. Happy to have them in the mix again.

  • back in the noughties, New Yen Yen (Chinese grocer) in Chinatown, Sydney had some Korean buckwheat noodles that were gluten free: rice flour replacing wheat flower. That lasted less than a year, sadly.
