So, lessons:

  1. I should go order baba ganoush at the local Lebanese place, just so I have a frame of reference. Not knowing at all how it is supposed to taste significantly impacts my cooking style, lol.

  2. Need pita bread next time.

  3. May have overdone the garlic. Good thing I don't have a hot date later 😜

  4. Do not cook when you are really hungry, almost ate 1/3 of this before the whole recipe was done.

  5. Need to look and plan for more time for the other eggplant recipes... and since a lot of oven usage, reserve for a non heat day or for recipes that can be done outside on a grill.

Okay, Tahini mixed, threw a bunch of garlic in there. There's a bunch of "personal preference" in the random recipe I pulled up which is unclear to the beginner lol. #eggplant

Some lemon from the garden, cayenne, pepper. The proportions here are dodgy in the recipe. I don't know what this is supposed to taste like. 🤔#eggplant #babaganoush

Okay, going to try baba ganoush, because I've never made that, and Ratatoille takes too long. First lesson: do not buy the largest eggplant you can find (Apparently smaller is less bitter and more tender?). #eggplant

The eggplant (Aubergines, if you will) are looking particularly strong and vigorous this season. I put this down to a complete absence of any flea beetles this year. This is the first year in as long as I can remember without all their leaves being full of holes. Got to go pick some more. #Gardening #Allotment #NewEngland #GYO #GrowYourOwn #Eggplant #Aubergine

The other day in one of the magazines, there was a story about an incredible Afghani eggplant dish. And we do like an eggplant in our family. The writer was going on and on about how great it is but no recipe. I saved the story and went on a search. What did I discover? It was one of the dishes I made for our radio station dinner but did not get a chance to try — I have such hard time eating when cooking for big groups. Made it again for a smaller gathering and finally had some leftovers on the day after. And it was so so good! The recipe for Borani Banian comes from the excellent book Pakistan by Maryam Jillani. I love food from this area of the world and this book is a treasure throve with ideas. Here, fried slices of an eggplant are sandwiched between tomato sauce flavored with garlic, onions, Kashmiri powder, turmeric, and mint and yogurt spiked with lemon. Sounds simple but when it is put together it is crazy addictive. #food #cooking #pakistanifood #eggplant #inmykitchen
