(reader: He didn't give up)... working now. Apparently Blender had a VR breaking bug. Fixed in 5.2 Alpha. VR in blender now *kinda* worked for me, although make sure you have a floor region defined on your quest otherwise there's some obscure Vulkan infinite loop that means you can't quit out of VR mode.
My stack - SteamVR (set to OpenXR)>WiVRn Streamer on PC, WiVRn client on Quest 2
