Hey, Fedi, throw me your favourite quickish, lowish carb, solidly "Italian" dinner recipes. I kinda feel pasta'd and risotto'd out at the moment. Most of what I can think of is chicken, and I kinda eat chicken every lunch time at the moment... it's not out-out, but it'd need to be pretty compelling. The pre-dinner shopping options are Tesco and a good local farm shop. Vegetarian is absolutely an option. I'm at work and the Italian cook books I'd normally try to draw some inspiration from are thus inaccessible. (And web searching for recipes is soooooooooo crap and painful.) #cooking #Italian #AskFedi #DearLazyweb

    Context: for reasons I cannot really remember, Tuesday is "Italian night" at home. I think it started with pizza or something like that... but you can only do so many pizza-Tuesdays before you start to hate pizza, and I don't want to hate pizza. Pizza is also not an option. Eatlng a lump of cheese with a bottle of Italian red wine is an option. 😂

    @yvan how about borlotti beans as a base? Quite filling but relatively low carbs. You could do a tray bake with beans, greens, garlic and protein.

    @yvan I'm keto so very low carb. I generally oven bake a pan of meatballs then top with a bit of homemade pasta sauce, garlic, spinach or finely sliced broccoli, topped with cheese (mozzarella and parm). Continue to bake until cheese is bubbly brown and veggies is cooked. Note: the broccoli, tomatoes and garlic are high in carbs so go easy on those.
