@matthew@famichiki.jp Use a scale. It makes a difference. Flour measured in cups can be off by up to -20/+80%. Also, you have to wash them later. I convert all my recipes to mass measurements and measure by scale directly into the mixing bowl. Also an unqualified "cup" can be anything from 150 to 250ml. In the US, 236.6, 240, 250 are valid cups. Japan 180. Brittan 170. Canada 227, 250. Latin America 200. Russia 123, 246. Dutch 150, 250.

On the topic of vanilla. Good vanilla is hard to find in Japan. There seems to be an import restriction on vanilla.

I use Mon Reunion Vanille Excellent (モンレニオン ヴァニラ). It is concentrated so this 20ml bottle lasts a very long time. 2-4 drops of this is stronger than 1 teaspoon of vanilla essence and tastes/smells much better. It is ¥1350 at tomiz (stores and website), and other places. You need to search for the katakana name to find it at a Japan store.

Notes: Make extra, they freeze very well. Strong flour makes insides more gelatinous when first cooked. Weak flour makes lighter after cold. If you use salted butter, remove the ½ tsp salt. 2 large eggs are about 100g of liquid egg or equivalent substitute. I prefer Mon Reunion Vanilla (available at Tomiz). It is concentrated so only 8-10 drops are needed. For savory waffles, remove the sugar. Maybe add ½ tsp more salt.

🚨🚨 WAFFLE BREAKFAST ALERT 🚨🚨

I've made this recipe so many times now and it is the best of its kind. Lacey crispness outside, soft melty inside. Now adjusted for Japan ingredients.

240g strong flour
45g granulated sugar
1 tablespoon baking powder (15ml)
½ teaspoon salt (5ml)
440g milk (425ml)
100g unsalted butter melted
2 large eggs
2 teaspoons vanilla extract (10ml)

Mix dry in bowl 1. Melt butter in bowl 2. Mix remaining wet in bowl 3. Slowly mix wet in to butter. Mix wet in to dry.

@FlockOfCats@famichiki.jp I just picked up this Blitzwolf BW-KB1 from HardOff for 1000 yen. RGB everywhere (controllable and disablable). USB-C port for wired use or charging. Can be paired with up to 5 different BT devices. No drivers needed. I've tested wired connectivity to Android, PC, Raspberry Pi.
