Just got sent a crumb pic and all I can say is Wow! 👀 I gotta try this bread for myself. They say it's lighter and fluffier than the sourdough with not as dense a chew. Crust is softer and a bit thinner as well. Not as distinct a flavour profile as the sourdough but still really tasty. They've already made French Toast and are planning to have grilled cheese sandwiches later today 😂 #Bread

This was a pretty sloppy dough with a short bulk ferment time limiting the number of folds that could be applied. I started with my 'Rubaud Riff' mixing (2 sessions, 15 min rest), then 3 very aggressive sets of stretch and fold with 15 minute rests, finishing with 3 'high stretch' coil folds with 30 mins rest between. Seems to have turned out well from the outside anyway. Hopefully I'll get a crumb pic from my buddy so I can see what happened inside the loaf! 😂 #Bread

Got a 'Need bread, Stat!’ message from a #BreadAndBarter buddy last night. That meant a yeast based bread as my starters were happily snoozing in the fridge.

Usually I'd do a White Bread with Poolish but decided to try something different this time.

First attempt at White Bread with 80% Biga. 80% of the dough mass is in the pre-ferment! The 20% mass of the main dough looks silly against the immense volume of the Biga.

Scaled for my preferred loaf size, hydration reduced for AP flour.

A little riff on the Rubaud method for mixing very wet doughs. Rather than using my hand to simulate the diving arm mixer action, I used a silicon bowl scraper.

Volume up to hear the little 'slap' as the dough is released from the scraper and hits the bowl. This is the second round for this dough after a 15min rest so it's a more gentle mix with very little effort on dough stretch so it is also extremely fast. Very nice and clean to do as well. 👍

@geekmomprojects this is amazing! And many thanks to the link to the mapper by @themariday! I will be at that stage hopefully later today! Quick question: can it use the laptop camera rather than an external one like you are using? The mapper also supports FadeCandy, WLED and FCMega backends, not just the PixelBlaze. That is awesome! 👍👍 I may get some more use out of the old FadeCandy boards I have!
