@conranimal@mastodon.praxis.red @broadwaybabyto@zeroes.ca SARS2 is far more transmissable than hantavirus and there are A LOT of people that still wear N95s who have never had COVID. A fit tested elastomeric is better, for sure, but N95s are still very very effective.

@LurkerMcGee One thing I really like about the X-plore 1950 is the chin seal is very tight and they seem to extend a lot further below the chin than most N95s. I'd definitely recommend them as a disposable if you keep facial hair (though I've only seen a study on N95 efficacy for beards up to 10mm long, they seem to still work really well with beards, which is NOT the case with earloop respirators at all).

@LurkerMcGee https://canadastrong.ca/products/drager-x-plore-1950-niosh-n95-respirator-mask-made-in-sweden Although you can get a better seal with elastomerics if they're fit-tested, these are definitely the best disposables I've used and they seem to fit most faces. I use a medium-large but the small is great for very small adult faces.

@thatkatharine My very favourite still remains the Drager X-plore 1950. Hands down the best disposable respirator on the market, IMO, and I can't recommend it enough.

One of my favourite things to ferment lately: mirepoix. I had a bunch of celery that wasn't going to last much longer, so this is how I saved it. Thus is super useful for soups and pasta sauces with a lot more complexity in flavour than unfermented mirepoix. I basically ferment it until I need it, then throw the remainder in the fridge, but 2 weeks is probably a good rule of thumb.

This one is 1/3 onion, 1/3 celery, and 1/3 carrot, plus a sweet pepper, mixed with 2% salt by weight.

Well that's kinda cool. My confirmation bias tells me this is definitely true. No need to further critically analyze the study because I love kimchi and fermentation.

"Kimchi enhanced intercellular signaling mediated by antigen-presenting cells, increased antigen uptake, and promoted the upregulation of MHC class II-related genes through the JAK/STAT1-CIITA axis. Single-cell trajectory analysis revealed accelerated CD4+ T cell differentiation toward effector and regulatory phenotypes, whereas CD8+ T cells, B cells, and NK cells remained stable, indicating preserved systemic immune homeostasis. In summary, 12 weeks of kimchi dietary intervention enhanced antigen presentation and remodeled CD4+ T cells without broad systemic activation, providing single-cell evidence of kimchi-induced dietary immunomodulation in humans."

Fun fact: You can plant sunflower seeds intended as bird seed. You can also plant flax, beans, and chia from the grocery store. It's a super cheap way to garden chaotically, even in places that aren't necessarily yours...

I know I haven't posted fermentation pictures lately but I still feel a need to rant:

Learning to ferment food has been a huge money-saver for me and I wish I knew about it when I was a broke student. It makes it much easier to buy veggies in bulk and it helps avoid waste when I find I'm not going to use something before it goes bad. Jars are the biggest investment, which you can often pick up for free.

Last night, I started fermenting a big batch of asparagus because I realized I wasn't going to use it. I made a big batch of miropoix a while back after chopping too many onions and use it like I do normal miropoix in my cooking and it adds a whole other layer of complexity to my meals. Last summer, I pickled all our green tomatoes at the end of the season and ate them on salads.

It is honestly astounding how long things last after fermentation. I have fermented blueberries, fermented bush beans, fermented cilantro-mint paste, and fermented garlic scape paste in my fridge, still, from last summer. And, unlike canning, fermentation actually makes nutrients MORE bioavailable than they are when veggies are fresh.

It's safe, too. Lacto-fermentation of vegetables is generally accepted as being safer than eating raw vegetables, even.

Anyway, that's my plug for #fermentation. You should try it.
