For instance, Foods That Will Win the War, from 1918, is a cookbook focusing on recipes that skip or minimize the use of wheat flour, meat, and sugar. It was meant to help with WW1 shortages.
I got it for gluten-free bread recipes.

Dietary flexibility helps some, too. Even if there aren't famines, interrupted shipping chains could mean temporary shortages, like in 2020 when white flour sold out, but the stores still had cornflour. Times like that, a recipe for cornbread made from cornflour-only can be really useful.
So being willing to learn a few new recipes based on different ingredients makes it easier to adapt.

There's a couple other things people can do, esp. if you can't personally garden.
1) If fresh produce becomes a problem, you can sprout seeds to make baby greens even in an apartment. Do you have some large glass jars, and openwork lids you can use to let the water drain and let air circulate? Plastic lids like that are fairly cheap and sold in hardware or home-supply stores, I think.

Depends on whether the crops were already getting too much sun, vs. barely enough. The places where solar panels improve yield are places where it's dry and hot. *
Places that are plenty shady and humid already, can lose production due to panels. But if the extra shade doesn't cause your crops to develop fungal diseases, the lost harvest can be balanced out by the electricity as an alternate source of income.

I think your reasoning is sound that a few minutes of un-masked assessing the air is less risky than taking chances on a year's lease.

If you want to learn, the library will have knitting books with sections on "repairing knits" and "fixing a dropped stitch".
And there are videos that go into more detail and let you replay it slowly.
