I was not expecting this much enthusiasm for a toot about beets! Steve’s Beets Round 1: I made a kitchen sink salad for dinner last night (quick, lazy, healthy, helped us get rid of odds & ends in the fridge.) I thinly sliced the beets and sprinkled with olive oil, white Modena vinegar, salt and pepper and roasted along side chickpeas and onions. Threw that on top of Mediterranean salad and quinoa. Topped with homemade Italian dressing. The beets were sweet and tender. Thank you, Steve! 🙏🏾

@PermaSolarPotter I was very happy with my beet soup recently. More borsht inspired than borsht actual, but, nevertheless tasty.

@PermaSolarPotter@mastodon.green May your neighbor rest in power. Even after his passing, he is giving care to you. Everyone focuses on the roots for beets but I love beet greens just as much as the root - super tasty, less bitter than kale or chard and more fun and colorful. For the root, I just use it in place of carrots or other tubers with onions and garlic, and then mix that into the rest of what I am cooking when I serve it (as to avoid a purple dish).

@PermaSolarPotter I bet your wonderful neighbour thought you were a wonderful neighbour too. I hope your happy memories help you adjust to your new normal. I like grated beetroot with lemon juice and black pepper, raw or cooked, yummy 😋 It's also delicious roasted with kumara, then stir through chopped feta cheese and some basil dressing 🥰

@PermaSolarPotter as I was scrolling past the photo I thought yum! Rhubarb! Then I realized, it’s a beet. I like them pickled but I bet it would make a great chutney!
