Everyone focuses on the roots for beets but I love beet greens just as much as the root - super tasty, less bitter than kale or chard and more fun and colorful. For the root, I just use it in place of carrots or other tubers with onions and garlic, and then mix that into the rest of what I am cooking when I serve it (as to avoid a purple dish).
