I gambled on a container of unmarked rice I had in the pantry, and made fake clay pot rice (with dried Chinese sausages, tofu puffs, and shiitake mushrooms)… it turned out okay, but I’m pretty sure this is some variety of basmati rice. Was I supposed to use jasmine rice? Or the whatever generic long grain that I use for arroz rojo?
My Mexican partner says “rice is just rice”, but I grew up in a medium grain japonica variety household (thank you Kokuho Rose farmers 🌾❤️) so it definitely matters!
