My ramen has been pretty good lately and makes me feel happy I'm making progress 🥰 My cooking has been leveling up exponentially since starting my vegan ramen journey. My latest batch included a light tonkotsu tare using sakura shoyu for valentines day. We just had leftovers last night and it was still 🔥 I watched a super informative video about soy sauce and it recommended to this cookbook called The Noma Guide to Fermentation and I am excited to make my own shoyu someday too 😄 #ramen #vegan
