They are one of my gotos for taking to gatherings. I smoke the meat 2 days out, assemble them the day before and deep fry them just before I leave. Thousand Island for the dipping sauce. The trick is getting the right mix of cheese, sauerkraut, and meat.

That's past. She is older than me (hag lover here). We thought about it back when she could, but we lived in L.A., both in the Industry, living in a 1 bedroom apt in Koreatown, and couldn't afford private school (L.A. public is a slaughter house). We listened to all our friends about how you shouldn't, the economy is so bad right now...
All these years later, I should have packed her ass up in the cars and drove back to the mountains and had kids with her. She said as much, later. She cries sometimes about it, when she has had a glas or two of wine. How she knows I would have been a good father.

Getting a pungent enough cheese and strong sauerkraut isnt easy, but very important. The Kraut has to be strained to get it dry as possible, so it looses a fair amount of kick. The cheese it a hit or miss, sometimes the Swiss is strong enough, other times I end up having to get 2 or 3 to find one that you can taste with each bite.
I want each bite to be like the sammich. I gotta taste the cheese through the bite of the sauerkraut and the savory and smokey meat each time.
