My understanding has always been that it depends on what sort of rice you’re using. Some rice you want sticky. Some rice you don’t. I believe it’s tied to culture because of cuisine, not tradition. For sushi, you wash the rice. For risotto, you don’t. I have done both and I’m from New Jersey.
