This morning I declared myself Employee of the Week, made a sign, and posted it on my door. In honor of this auspicious event, I took the last three hours of my work day off and went shopping. Honestly, I was humbled to just be nominated for the award.

Chat, it was not a good work day. I punctuated it when I got home by dropping my favorite coffee mug on the floor (leaving it in shards, of course) as I was attempting to load it into the dishwasher. I’ve subsequently taken a Xanax, and prepared an eccentric “Thanksgiving Dinner Meatloaf.” When it comes out of the oven, I’ll eat and go to bed.

Apparently I’ve volunteered myself to fabricate an Eierschecke for some (straight) Germans (that I find delightful) in my life. First, I have to locate quark. I believe I can find it at HEB’s Central Market. We need to have a proper #KaffeeUndKuchen.

I love Stephen, but I think Stacey would have baked a better final than Stephen ultimately baked. Overall in the season, Stephen outperformed Stacey, but maybe Paul and Prue made a mistake? (Not that any of this matters to anyone any more—except maybe Stacey)

I feel moderately less crappy than yesterday morning, so I guess that’s a plus. I’m up baking only because I woke up coughing and needing to void my bladder. I realized going right back to sleep wouldn’t be easy, so I swallowed a random handful of pharmaceuticals and glugged some cough syrup, and then started this ferment. Dubbing these the Fever and Delirium Loaves.

NGL, throwing these dough masses about takes a toll on my hands. They already hurt, and I’ve just started for the weekend. This will eventually push me back to using a machine to mix and knead my sponge.

Sourdough discard recipes are really misleading. You aren’t using the leavening of the starter—just the leftover flour in a paste form. You may get some sourdough flavor (depending on the composition/age of the discard), but the main purpose of discard recipes is to not waste flour. In this economy, I can get behind that. But better yet, keep a small starter with only minimal discard waste.

First two #sourdough loaves have been in the fridge cold proofing for several hours now (they’ll be baked off tomorrow) and I’ve started two more loaves of my favorite, croissant-style loaf. These won’t finish fermenting till near 10pm tonight due to the quantity of frozen grated butter incorporated into the dough. #MySourdoughJourney #sourdoughlife

Sunday’s sourdough prep hot out of the oven this afternoon after the overnight cold proof. There’s a number of things in these loaves that didn’t turn out as I intended.
