Sourdough discard recipes are really misleading. You aren’t using the leavening of the starter—just the leftover flour in a paste form. You may get some sourdough flavor (depending on the composition/age of the discard), but the main purpose of discard recipes is to not waste flour.
In this economy, I can get behind that. But better yet, keep a small starter with only minimal discard waste.
