Considering the other knives would be more or less the same to me in my application as it sits, it may be better to go with a paring knife as the third one. Of course I can always order more so the point is more or less moot.

I find the santoku knife is the most versatile. It can do the job of basically every other knife except the paring knife. Its not super great at any of them but its basically a japanese utility kitchen knife. If I could only have one kitchen knife its the one I'd go with tbh
