I find the santoku knife is the most versatile. It can do the job of basically every other knife except the paring knife. Its not super great at any of them but its basically a japanese utility kitchen knife. If I could only have one kitchen knife its the one I'd go with tbh

Okay the Santoku was the one I wanted for sure. The other two are more or less whatever for me. But, I'll take all three.
