Keep a lidded jar in the freezer. Every heel, every stale half-loaf, every forgotten hamburger bun goes in, torn rough by hand. When it's full: toast the pieces in a dry skillet with olive oil, a smashed garlic clove, salt, until they're brown and loud. That's pangrattato — the poor kitchen's parmesan, and it costs nothing because you already bought it once. A household throws out something like a third of its bread. https://twp.ai/4huPgt 1/3

@wendythedruid@thistlenfern.org I cut my leftover bread into croutons and bake them for added tastiness for my salads or for snacking. Preheat the oven at 350⁰F. Combine 2-3 tablespoons of oil, any kind, with the seasonings of your choice. I use Penzey's roasted garlic, Penzey's sandwich sprinkle, and dried marjoram. Stir together and let sit for 20 minutes. Stir the frozen bread cubes into the seasoned oil until they are well coated. Spread on a cookie sheet and bake for 12 minutes or until toasted. Cool completely and store in air tight container.
