Usually the organized rides have decent food and water support at rest stops. On your own you need to figure out sources of water and bring enough food. Or stop and buy some. As far as tools and parts I don't bring anything more than what I'd take for a regular ride- multi tool, spoke wrench, pump, tube and patches.

I can’t imagine anyone doing a century without stopping, (except the truly exceptional riders aiming to break records.) If you’re going to stop, build a hearty snack or meal into it. An hour’s rest + refueling makes a huge difference
