This is very similar to the yeast-based pizza recipe I have used in the past, which was based on the one from The Awl (Written by Choire Sicha, it didn’t age well, CW: coarse language; using sexual orientation language as slurs. @sol@typo.social I always feel like I have to insist that i did so pre-Covid, but when I got into sourdough baking, I developed a whole cosmology around that, with much input from my pal and your Loïc, based on this recipe from Maurizio at The Perfect Loaf (https://www.theperfectloaf.com/sourdough-pizza-dough-and-recipes/).
