I was at a Mexican restaurant earlier and they had on their menu carbonara Buldak with chips, corn, mayonnaise, nacho cheese, and cojita cheese, and honestly they have the whole "fusion" concept nailed down. The trendy Japanese-Italian places should take notes. I was there for dessert, but I'll defs be back for that another day.

@timesandseasons@mastodo.neoliber.al one of my favorite Mexican places in my hometown hired a sushi chef who was let go or left a local Japanese place and then he taught them how to make sushi. It isn’t fusion but you can straight up order a burrito and chips and queso and a sushi roll at the same place. And the sushi is pretty reasonably priced and better than the grocery store stuff (last time I had it a few years ago).
