Having settled on an experiemental waffle formula for the main course, I contemplated the possibilities for a vegetable, and it hit me!OYG, it's that time of year - NETTLES!
I planted them in my back yard maaaaany years ago just so I'd have that special spring vegetable. 😋 😏

The waffle experiment turned out nice. Using boiled flour for part of the batter gave the very plump waffs a fascinating threefold texture. Crisp on the outside, almost pudding inside, with a layer of gentle chewiness between.
