OK, after having "slept on it" (ouch, those track rod ends are not comfy)... I am ordering the locally available track rod ends from EuroCarParts & picking up today. The rest of the track rod assembly seems sound, has no play, etc. This will allow me to get the car back together this weekend... for the most part. Albeit not sure about ready for MOT on Wednesday as the next sticking point is the transmission oil... I can find something at a reasonable price from ECP that is technically compatible in terms of all specs, but doesn't specifically have the VAG part number authorisation/certification. Or I can order something online which probably won't arrive by Wednesday. I reckon I'm going to take a punt on the Mobile/ECP option in the name of getting it done. (It's not like I have any warranty to worry about lol.)

    Getting the oil means I get the 25% discount which makes ECP prices almost not entirely unreasonable. (Funnily enough the threshold for the discount works despite the oil itself not being subject to the discount.) For the deflector shield I am just going to re-fit the old axle nut for now and then I can easily take that off and fit the new shield then the new nut (the nuts remove somewhat self-destructively, though not so much so that I have any real issues with re-using one short-term.) In general I'll just reuse screws/bolts and aim to eventually replace the ones that are recommended to be replaced. I'll probably skip the more static ones like the rear suspension strut mount bolts. Watched a couple of "pro" YouTube videos for near-identical Polo suspension last night and they were clearly just reusing these and not suggesting replacements. I think the only one that is closer to critical is the drive shaft screws. Fekkin'ell, how is it 1pm already tho... (been that kinda morning.)
