Someone mentioned banana peel bacon and I thought they were just messing with me.
They were not.
Out of curiosity I tried my own variation of this:

With the ingredients I had. Maple syrup, soy sauce, garlic powder, and tamarind powder. Stirred together and marinated the peels in it for 20 minutes. Cooked for 4.
Not bad. Not great, just ok.
I'm sure a good chef could make it amazing.
More like banana peel jerky than "bacon"
