Cooking is so full of surprises. Tonight I made a big batch of refried black beans like I do every month or so, to cook with througout the month. I've been refining the big batch recipe over the last few months and the last month's effort was really good but still not exactly right. So this time I had an inspiration to add a little apple cider vinegar. I was not prepared for how much a difference it made! Adding a little acid made all the flavors muddle together nicely. Can't taste the vinegar at all, but everything else comes through a little brighter. Definitely updating the recipe card with that tweak.
