@ermo @jolla The model is: Do what you want, it's your device.
You can install native apps from the Jolla Store, OpenRepos, Chum (thanks @piggz), etc. You can get an RPM from someone off the street if you're brave enough and flash it to your device. I don't personally know how trivial it is to set up your own OBS and repo, but if Chum exists then clearly you can 😁

For Android apps, you can install apps with F-Droid, Aurora (open source Google Play Store client), etc. When running them with microG (not required ofc) than just running them on top of Google's Android, I'd argue you're in a better and more privacy respecting position since you're using a reputable open implementation of the services, and APIs like for Maps are swapped for privacy respecting options e.g. MapLibre.
