  Today on #poor and #vegan I had a garage sale over the weekend so I was able to get a decent amount of groceries this morning. I'm feeling it though. It's sent me into a bad chronic illness flare up. I prep cooked anyway today because it's the only way I can eat.

  Spinach tofu served with rice. I got the recipe from YouTube. The Divine Chef,iirc. Sautee onion, garlic, spinach,tofu. Whisk together plant milk,veg broth, cornstarch, seasonings and add to pan. Cook to desired consistency. Serve with rice.
