You can continue using replies on the poll thread as the sole authoritative vote record, exactly as you do now. The poll simply serves as an optional front-end interface for participants. Any additional step is performed by voters, not organizers. It also adds a bit of entertainment garnish for participants by showing a rough current standing and a visible vote-closing timer, while the reply count remains the official result.
