So Italian Night dinner ended up being beans, as inspired by @julianlawson 's reply to my musings earlier.
As it happened they have these Italian tinned beans in my favourite farm shop. This is what made my decision in the end. Said farm shop, has also recently started stocking wine including Italian reds โ no Tesco needed! (The Bushel Box in Willingham, Cambridgeshire, FYI.)
Started with celery and onion in olive oil and butter (I am out of EVOO at the moment, the horror), added fresh garden oregano, thyme & parsely, plus dried oregano and a touch of chilli flakes*, some garlic*, some chopped eggplant, then red & yellow capsicum plus Florence fennel, blanched purple kale*, some basil & garlic passata*, a bit of tomato paste, and the rinsed tinned beans.
Adjusted with salt, pepper, and some balsamic vinegar.
Final stir-through of wild garlic & sunflower seed pesto.
Served with fresh sourdough smeared with more of the pesto.
Italianesque at least?

I almost decided to do polenta, but a bit too bushed to tackle that. The bread filled that spot, and much less stodgy. Bread and beans is not exactly low carb... until you compare it to our more usual Tuesday fare of pasta, risotto, or pizza. ๐ Didn't even throw any meat on top. Didn't need it. (My daytime eating is very high protein anyway.)
