It really depends on what you're eating. Nobody's going to stuff a beef wellington or a pasta alfredo with hot peppers. That's madness. But it can really bring a pot of chili together.

I've got them growing fresh in my garden and they're great. And I have no compunctions about using dry spices like cayenne. As long as you don't overload heat, it's meant to bring out the salty, sweet and savory flavors, not drown them.
