Today I learned the word 'stirk', meaning yearling bull or bullock. Less commonly a young heifer. Usage seems to be confined to Scotland, Norn Iron and parts of England. Old English stirc, perhaps from stēor + -oc, -oc meaning small or young. America stuck with stēor and got steer. We prepended the -oc with bull to get bullock.
