I retried this recipe as waffles and the result is pretty spongy. It's not bad, but tends to tear apart when trying to remove it from the waffle maker even with oil (although store bought mixes have that issue too, but to a lesser extent).

I tried the recipe again cutting the amount of baking powder in half. It's now closer to what I'd expect from in the consistency of a waffle, so overall I think it's about right.
