One "make your demographic visible" hint I've seen is to walk through the store with your helmet (rather than locking it outside) so it's clear there are money-spending customers arriving by bike. This of course works best when the people in the store seeing the customers also make design decisions, and not an absentee owner 2 continents over.

Two continents over, two towns over, or two feet over - all appears to be the same. Having worn my helmet into many local shops, it does sting a bit when those shop owners testify at city council meetings that "nobody ever comes by bike."
