picture after I rinsed it off. I learned that the primary way you figure out a carrot is mostly mature is by checking to see if its "shoulders" have broken the surface of the dirt.

I'll be processing this guy soon. Need to slice it, blanch and freeze it. Still holding on to my veggies for my minestrone soup at the end of the season.
