30 Jul: Peppers stuffed with hake 'brandade' #cooking #food #FoodDiary A successful experiment. Based on the classic Spanish peppers stuffed with salt cod brandade. Blitzed the hake with olive oil and garlic, and stuffed inside small red peppers. Baked in tomato sauce (tin of toms, oil and smoked paprika mostly). Kept the skin to crisp of course. Next time might lightly poach or brine the fish first and add more oil, but pretty good for guesswork.
