My black eyed peas recipe! This is a favorite in our house, as my in-laws are all from Georgia, I had to learn to get it right. I make this all the time in the instant pot, but any other pressure cooker should work roughly just as well with some tweaking. These amounts are per ¼lb (113g) of dried beans (yes black eye peas are beans) so you can scale it up if need be. Adjust salt to taste, you know how to cook. ¼lb is about enough for four people. 1 bay leaf1 tsp onion powder1 tsp garlic powder / granulated garlic1 tsp paprika (ideally sweet, but any good paprika is suitable)⅛ tsp salt⅛ tsp MSG¼ tsp black pepper1 tsp liquid smoke or some bacon pieces. (I actually like liquid smoke better but both are good)2 cups of water Rinse the dried beans well (and check for rocks...), and throw them into the pot with the water and seasonings and just kinda swirl it around a little. Cook 21 minutes on high pressure, and let the cooker do a full natural release. Total prep + cooking + release time is ~1h. When storing leftovers, keep some of the liquid, its where all the taste is. I like to make a ½ pound at once, and keep half of it in the freezer for next time. cc @madison@nicecrew.digital
