I made the boring choice and chose the boringest distro.
A friendly reminder to keep your $HOME on a separate partition or even a separate drive so you don't have to feel stuck.

@amd@gts.amd.im what's the desktop environment in plain Debian like? I've only ever used it on headless servers, and I have Ubuntu on my laptop.
