The people in Quebec who make gorgeous gluten-free flour and delightful videos about baking with it (l’Angélique) started their three week vacation today. So I found a shop in the GTA (Bread Essentials) that carries it, has it in stock, and employs local couriers. Everybody should have the resources to make these kind of choices. Close your store to take time off. Specialize in what you care about. Hire people, not fungibles. Avoid Amazon and their ilk.
