finally after only listening to stuff come out janky on the speakers on my work computer I figured out how to keep audio from getting routed both to the internal speaker in the mac pro 5.1's chassis (out of phase!) as well as to the amplified Wohler monitor I have hung off the line out
I find it interesting ALSA has multiple output profiles(?) for this system and one of them does that, because usually connecting line out to something disables the internal speaker on it

my completely uneducated guess is that when you're running OSX or Windows on one of these, it uses some kinda jack detection to determine where to send the audio, and ALSA just simply exposes all the output options to the end user and doesn't depend on that your mileage may vary but it seems like on my setup the correct setting is to select port Line Out and profile Analog Stereo Output
